Şehriye Çorbasi recipe
Şehriye Çorbasi is a very simple recipe. Like many Turkish dishes it is important to choose fresh and good ingredients.
1 cup dried vermicelli (pasta), 1 tablespoon butter, 3 peeled tomatoes scattered and cut into small pieces, 4 cups chicken broth (or a mixture of broth and water), salt, freshly ground pepper.
For the garnish:
¼ cup finely chopped fresh parsley, lemon quarters.
Method
In a large saucepan, heat the butter and sauté the tomatoes for 5 minutes. Add the chicken stock and bring to a boil. Reduce the heat to medium and add the vermicelli, salt and pepper to taste and cook for 10 minutes, stirring occasionally. Remove the saucepan from the heat and let the soup rest for another 10 minutes.
Serve in bowls garnishing the dish with freshly chopped parsley and lemon quarters. If you have boiled or roasted chicken, cut it and serve it in a bowl to accompany the soup.
