Pilaki

Pilaki, one of the most popular meze

White bean pilaki is a tasty appetizer of Turkish cuisine, but apart from the two teaspoons of sugar that act as flavor enhancers, the recipe is perfectly in line with our tastes and is great to precede both a fish-based lunch than meat.

These are the ingredients to prepare a pilaki for 4 people:

Cannellini beans 250 g, Extra virgin olive oil 3 tablespoons, Carrots, 1 Celery,1 Potatoes, 1 Copper tomatoes, 1 White onion, 1 Garlic, 1 clove, Salt to taste, Sugar 2 teaspoons Water 1 glass.

Preparation of pilaki:
Boil the beans, left to soak overnight, for 45 min. Peel the vegetables and cut them into cubes.
Cut the garlic into slices, in a saucepan fry in succession the onion and garlic in the oil (2 minutes), add the carrot (2 minutes), celery and potato (2 minutes); finally the beans, chopped tomato, water, salt, sugar and cook for 1 hour over very low heat. Serve cold.
