Balık Çorbası

An exquisite seafood soup

Balık Çorbası is a soup made with fresh fish and served on bread. A recipe that has been handed down for years with different versions but which belongs to the Turkish cuisine of the seaside towns.
Today the recipe can be prepared with mixed fish to which you can add, as we did, squid, shrimp, mussels, clams, cod fillets and baby octopus.

Balık Çorbası recipe

Balık Çorbası is a very simple seafood soup to prepare. The secret is to use fresh raw materials.

Ingrediants

6 glasses of water, 2 onions, 1 potato, 1 carrot, parsley, 2 cloves of garlic, salt, black pepper, olive oil, 2 tablespoons of flour, juice of 1 lemon, 2 egg yolks.

Method

Boil the water. Put the fish and onion in the water. Once cooked, remove the fish from the water and remove the bones and skin. Finely chop the parsley, garlic, carrot, potato and boil them in the fish water. While boiling, with a couple of tablespoons of the same water, dissolve the flour in a bowl and then put everything back into the pot. Add the fish cleaned and cut into many strips and add a little more parsley. Leave to boil again over low heat. In the meantime, take a few more tablespoons of broth and dissolve the egg yolks and lemon. Add the mixture to the pot and mix well. Leave to cook for about 15 minutes and serve hot.
