Gözleme, the casket of good taste

Gözleme is a pastry made of yufka and brushed with butter and egg. The filling can vary: cheese, spinach, spiced meat, potatoes, mushrooms, onion, eggplant and so on and so forth. Sometimes the fillings change according to the seasons or traditions. The pastry is still cooked on a hot plate. You can try gözleme as a snack throughout the day but also for breakfast.

How to make Gözleme at home

The gözleme is a dish that can be eaten as street food or in a restaurant … but also at home. If you are not in Istanbul and cannot eat the original ones, prepared by the expert hands of the ladies, you can still prepare them at home with our recipe.

Ingrediants: 2 kg fresh spinach, 2 packages of cream cheese, 380 g flour 00, 185 ml water, 90 ml extra virgin olive oil + q.s. for cooking, 1 clove of garlic, salt and black pepper.

Instructions
First of all, prepare the dough: work all the ingredients together in order to obtain a smooth and homogeneous dough.
Create a ball, wrap it in cling film and let it rest for 20 minutes in the fridge.
In the meantime, wash the spinach well and cook them in a pan for a few minutes with oil, pepper, a clove of unpeeled garlic and a little salt: squeeze well and season with the crumbled cheese with your hands, salt and more pepper.
Divide the dough into 4 parts and roll out each one forming rectangles: stuff them with the filling and close everything as if it were a bundle.
Heat a non-stick pan very well with a little oil: cook the gözleme for 4 minutes on each side or in any case for the time necessary for the dough to be colorful and crisp.
